Summary:
The Assistant Brewer supports all aspects of the beer production process and the day-to-day operations of the brewery.
Must have demonstrated brewing experience, a commitment to following SOP’s and regulations, and a love of brewing.
Duties and Responsibilities Assisting the Brewmaster with the complete brewing process from milling to wort production, to fermentation and filtration.
Cleaning and sanitizing tanks, cleaning the outsides of vessels, cleaning floors, and maintaining the appearance of the brewhouse and cellar.
Cellar management including yeast pitching, daily fermentation tracking and dry hopping.
Close adherence to all SOPs and safety procedures, as provided.
Upholding and advancing our quality standards.
Accurately completing all checklists.
Development and brewing of test batches for potential release.
Cleaning-in-place/Sanitation-in-place using corrosives/strong acids/bases.
Basic cellar work, including transfers, filtering, fining, dry hopping, carbonating beer, and basic sensory.
Basic packaging, including kegging and canning Experience conducting basic laboratory work, including cell counts, pH measurement, ABV, and extract measurement.
Basic chemical hygiene and chemical handling.
Experience & Qualifications 1+ years of professional brewing or cellar experience.
A high energy level and an attention to detail is needed.
Ability to work both independently, and in a team environment.
Ability to work multiple shifts, including early morning or swing Reliable transportation to brewery Competent in MS Office and basic communication software Experience with Ekos Brewing Management software preferred or other brewery management software.
Requirements: Demonstrated capability in craft beer manufacturing and spirit distilling.
Demonstrated sound judgment, ethics, and the ability to work independently.
Prior supervisory responsibility of staff is preferred.
Prior management position in food and beverage operation is preferred.
Excellent communication skills, including the ability to give oral presentations.
Meticulous attention to detail.
Commitment to maintaining highest standards of cleanliness, food safety, and maintenance.
Must be over 21 years or older.
Able to work a varied schedule including holidays, evenings, and weekends.
Must maintain Alcohol Education Card, Food Handlers Card, and Work Card.

Occasional weekends and evening hours may be required.
Supervisory Responsibilities Responsibilities include interviewing and training cast members, planning, assigning and directing work; appraising performance; rewarding and disciplining cast members, addressing and resolving cast member complaints and creating work schedules.
Education and/or Experience Bachelors Degree in a related technical field and/or a formal brewing education from an accredited brewing program and Minimum 7 years of brewing management experience in a production brewery or a combination of education and experience.
Possess and maintain proficient understanding of Laboratory Operations / Quality Assurance / Sensory Trained to measure cell health, pitch rates, ABV analysis, IBU analysis, taste and color analysis.
Comprehensive knowledge of brewing and packaging equipment as well as steam, chilled water, and compressed gas utilities.
Experience and capable of performing all brew house, cellar, CIP, QC, and packaging duties required.
Must have strong computer skills.
Language Skills Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.
Ability to write reports, business correspondence, and procedure manuals, Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.
Mathematical Skills Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, and volume.
Ability to apply concepts of basic algebra and geometry.
Reasoning Ability Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
Certificates, Licenses, Registrations Gaming license issued by the Paskenta Gaming Commission.
TipS certification as trained at Rolling Hills Casino.
Food handlers permit from a relevant government agency.
Must obtain Title 31 certification as trained by Rolling Hills Casino.
Valid California Drivers license.
